Description

This Crockpot French Onion Meatloaf with Melted Swiss Cheese is a hearty, comforting meal with deep savory flavor from French onion seasoning. Slow cooking keeps the meatloaf tender and juicy while the melted Swiss cheese adds a creamy, nutty finish.


Ingredients

2 pounds ground beef

1 packet French onion soup mix

1 cup breadcrumbs

2 large eggs

1/2 cup milk

1/2 cup finely chopped onion

2 cloves garlic, minced

1/4 cup ketchup

1 tablespoon Worcestershire sauce

1 teaspoon black pepper

1/2 teaspoon salt

6 slices Swiss cheese

2 tablespoons fresh parsley, chopped (optional)


Instructions

  1. In a large mixing bowl, combine the ground beef, French onion soup mix, breadcrumbs, eggs, milk, chopped onion, minced garlic, ketchup, Worcestershire sauce, black pepper, and salt.
  2. Mix gently until the ingredients are just combined, being careful not to overmix the meat.
  3. Shape the mixture into a loaf and place it into a lightly greased slow cooker.
  4. Cover and cook on low for 6 hours or on high for 3 to 4 hours until the meatloaf is fully cooked and tender.
  5. About 10 minutes before serving, place the Swiss cheese slices over the top of the meatloaf.
  6. Cover again and allow the cheese to melt completely.
  7. Carefully remove the meatloaf from the slow cooker, garnish with chopped parsley if desired, slice, and serve warm.

Notes

You can substitute ground turkey or ground chicken for part or all of the ground beef for a lighter variation.

Provolone or mozzarella cheese can be used instead of Swiss for a different flavor.

Sautéed onions or mushrooms can be added to the mixture for deeper French onion flavor.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.

Individual slices can be frozen for up to 2 months and reheated after thawing in the refrigerator.
