Description

A light and refreshing Cucumber Shrimp Salad featuring tender shrimp, crunchy cucumber, and a zesty homemade dressing. Perfect for summer days and easy to prepare.


Ingredients

1 lb cooked shrimp, peeled and deveined

2 large cucumbers, sliced thin

1/2 red onion, thinly sliced

1/4 cup fresh parsley, chopped

1/4 cup fresh dill, chopped

1 tablespoon olive oil

2 tablespoons fresh lemon juice

1 teaspoon Dijon mustard

Salt and pepper to taste


Instructions

  1. In a large mixing bowl, combine the cooked shrimp, cucumber slices, red onion, parsley, and dill.
  2. In a separate small bowl, whisk together the olive oil, fresh lemon juice, Dijon mustard, salt, and pepper until well combined.
  3. Pour the dressing over the shrimp mixture and toss gently to coat all the ingredients.
  4. Serve immediately, or chill the salad for about 30 minutes to let the flavors meld together for a more intense taste.

Notes

If you want to add more flavor, refrigerate the salad for 30 minutes before serving.
