Description
Mini cherry pie bites with a sweet and tart cherry filling inside a flaky puff pastry, perfect for any occasion.
Ingredients
1 sheet puff pastry (store-bought or homemade)
1 cup fresh or frozen cherries, pitted and chopped
1/4 cup sugar
1 tablespoon cornstarch
1 teaspoon lemon juice
1/4 teaspoon vanilla extract
1 egg (for egg wash)
Optional: powdered sugar for dusting
Instructions
- Preheat the oven to 375°F (190°C).
- Roll out the puff pastry sheet on a lightly floured surface and cut it into 12 equal squares or circles.
- In a small saucepan, combine the cherries, sugar, cornstarch, lemon juice, and vanilla extract. Cook over medium heat for 5-7 minutes, stirring occasionally, until the mixture thickens and the cherries soften. Remove from heat and let cool.
- Place a spoonful of the cherry mixture in the center of each pastry square.
- Fold the corners or edges of each square over the filling to form a little parcel or turnover shape.
- Brush the top of each bite with an egg wash (1 beaten egg).
- Place the pie bites on a baking sheet lined with parchment paper.
- Bake for 15-18 minutes, or until the pastries are golden brown and puffed up.
- Let cool slightly, then dust with powdered sugar if desired before serving.
Notes
Berry Mix: Swap cherries for other berries like blueberries, raspberries, or blackberries.
Cream Cheese Filling: Add sweetened cream cheese along with the cherry mixture for a richer filling.
Cinnamon Sugar: Sprinkle cinnamon sugar over the egg wash before baking for extra flavor.
