Description

These Dilly Cucumber Bites are a refreshing, no-cook appetizer made with crisp cucumber rounds topped with a creamy, tangy dill spread. Perfect for summer gatherings or light snacking.

Ingredients

1 large cucumber

8 oz cream cheese, softened

2 tablespoons sour cream

1 tablespoon fresh dill, chopped

1 tablespoon lemon juice

1/2 teaspoon garlic powder

Salt and pepper to taste

Fresh dill sprigs for garnish (optional)

Instructions

  1. Slice the cucumber into 1/4-inch thick rounds and set aside.
  2. In a medium bowl, mix cream cheese, sour cream, chopped dill, lemon juice, garlic powder, salt, and pepper until smooth and well combined.
  3. Spread a dollop of the dill cream cheese mixture on each cucumber slice.
  4. Garnish each bite with a small sprig of fresh dill, if desired.
  5. Serve immediately or chill in the fridge until ready to enjoy.

Notes

Best enjoyed fresh, as cucumbers can release water over time.

Dairy-free cream cheese and sour cream can be used for a vegan version.

Dried dill can be substituted for fresh; use 1 teaspoon dried dill.

English cucumbers are ideal for this recipe due to their thinner skin and fewer seeds.

You can prepare the dill spread up to 2 days in advance.
