Ingredients

For the Cake:

2 ½ cups all-purpose flour

2 ½ tsp baking powder

½ tsp salt

1 cup unsalted butter, softened

1 ¾ cups granulated sugar

4 large eggs

1 tbsp vanilla extract

1 cup whole milk

For the Frosting:

1 cup unsalted butter, softened

4 cups powdered sugar

2 tsp vanilla extract

3-4 tbsp milk or heavy cream

For Decoration:

2 cups sweetened shredded coconut

Pink food coloring

Jelly beans or M&M's (for eyes and nose)

Black licorice (for whiskers)


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Whisk together the flour, baking powder, and salt in a medium bowl.
  3. Beat the butter and sugar in a large bowl until light and fluffy. Add eggs one at a time, mixing in vanilla extract.
  4. Alternate adding dry ingredients and milk to the wet mixture, starting and ending with the flour mixture.
  5. Divide the batter between the prepared pans, smooth the tops, and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  6. Cool cakes in pans for 10 minutes, then transfer to a wire rack to cool completely.
  7. For frosting, beat butter until creamy. Gradually add powdered sugar, vanilla extract, and enough milk to achieve a smooth consistency.
  8. Once cooled, place one cake on a platter for the bunny’s face. Cut the second cake into two pieces for the bunny’s ears and arrange above the round cake.
  9. Apply a crumb coat of frosting, then a thicker layer.
  10. Press shredded coconut over the frosting to create a "fur" texture.
  11. Tint some coconut pink for the inner ears and cheeks.
  12. Use jelly beans or M&M's for eyes and nose, and black licorice for whiskers.
  13. Serve and enjoy!
