Ingredients
1 to 1½ lbs halibut fillets (about 2–3 pieces)
2 tbsp olive oil
2 cloves garlic, minced
1 tsp lemon zest
1 tbsp fresh lemon juice
1 tsp dried thyme or oregano (or fresh herbs)
Salt, to taste
Black pepper, to taste
Fresh parsley or dill, chopped (for garnish)
Lemon wedges, for serving
Instructions
- Preheat the oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper.
- In a small bowl, mix olive oil, minced garlic, lemon zest, lemon juice, dried herbs, salt, and black pepper.
- Pat the halibut fillets dry with a paper towel.
- Brush both sides of each fillet generously with the olive oil mixture.
- Place the fillets in the prepared baking dish.
- Bake for 12–15 minutes, or until the fish flakes easily with a fork and is opaque throughout (internal temperature of 145°F).
- Optional: Broil for the last 1–2 minutes for a lightly golden top.
- Garnish with chopped parsley or dill and serve with lemon wedges.
Notes
Do not overcook the halibut, as it can dry out quickly.
Thin lemon slices or cherry tomatoes can be added before baking for extra flavor.
Capers and cherry tomatoes create a Mediterranean variation.
Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
Reheat gently in a 300°F oven covered with foil to prevent drying.
