Description

A simple and flavorful dish featuring juicy chicken breasts paired with creamy feta cheese and sautéed spinach. Perfect for busy weeknights, this meal is healthy, quick, and satisfying.


Ingredients

4 boneless, skinless chicken breasts

2 tablespoons olive oil

Salt and pepper to taste

2 cloves garlic, minced

2 cups fresh spinach

1/2 cup crumbled feta cheese

1 tablespoon lemon juice

1 teaspoon dried oregano

Fresh parsley for garnish (optional)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season both sides of the chicken breasts with salt, pepper, and dried oregano.
  3. In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for 5-7 minutes per side, or until golden brown and cooked through.
  4. Remove the chicken from the skillet and set aside. In the same skillet, add minced garlic and sauté for 1 minute.
  5. Add the spinach to the skillet and cook for 2-3 minutes, until wilted.
  6. Stir in crumbled feta cheese and lemon juice, allowing the cheese to slightly melt and blend into the spinach.
  7. Return the chicken breasts to the skillet, nestling them into the spinach and feta mixture. Cook for an additional 2-3 minutes to warm everything through.
  8. Garnish with fresh parsley, if desired, and serve immediately.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days.

Reheat in a skillet over low heat, adding a splash of water or broth to prevent drying out.

This dish is best enjoyed fresh, but you can prep the chicken and spinach mixture ahead of time and reheat when ready.

If you prefer a spicier dish, add red pepper flakes or hot sauce while cooking the spinach.
