Ingredients
½ cup butter (1 stick, melted)
4 cups shredded chicken (rotisserie chicken works great)
1 (12oz) bag frozen mixed vegetables
1 (11.36oz) box Red Lobster Cheddar Bay Biscuit Mix
2 cups whole milk
1 (14.5oz) can chicken broth (about 2 cups)
1 (10.5oz) can cream of chicken soup
Seasoning to taste (garlic powder, onion powder, black pepper)
Instructions
- Preheat oven to 375°F and grease the sides of a large 9x13 baking dish.
- In a large bowl, combine the melted butter, shredded chicken, frozen mixed vegetables, chicken broth, cream of chicken soup, and seasonings. Stir everything together until well combined, then pour into the prepared baking dish.
- In another bowl, prepare the Cheddar Bay biscuit mix according to the instructions on the box, adding in the milk as directed.
- Drop spoonfuls of the biscuit batter evenly over the chicken mixture.
- Bake for 30-40 minutes, or until the biscuit topping is golden brown and cooked through, and the casserole is bubbling.

Vegetarian Option: Substitute chicken with a mix of beans, tofu, or extra vegetables for a plant-based version.
