Description

Tart-sweet cranberry filling layered between a buttery, oat-studded crumble made from sugar-cookie mix — these Easy Cranberry Crumb Bars are a festive, comforting treat perfect for holidays or everyday indulgence.


Ingredients

17.5 oz sugar-cookie mix (about one standard box)

½ cup salted butter, melted

1 large egg

3 tablespoons all-purpose flour

½ cup quick oats (or old-fashioned oats roughly chopped)

¼ teaspoon ground cinnamon

12 oz cranberries (frozen — about 4 cups)

⅔ cup granulated sugar

1½ tablespoons cornstarch

¼ teaspoon ground cinnamon

2 tablespoons cranberry juice (or lemon, apple, or cranberry-apple juice)


Instructions

  1. Preheat oven to 350°F (175°C), spray a 9×13-inch baking dish with cooking spray, and line it with parchment paper.
  2. In a large bowl, mix together sugar-cookie mix, melted butter, egg, flour, oats, and cinnamon until fully combined.
  3. Reserve ¼ of the dough for the topping, and press the remaining dough evenly into the prepared pan.
  4. In a separate bowl, mix cranberries, sugar, cornstarch, cinnamon, and juice until cranberries are well coated.
  5. Spread the cranberry mixture evenly over the crust.
  6. Crumble the reserved dough over the cranberry layer.
  7. Bake for 35–40 minutes until the topping is golden and the filling is bubbling.
  8. Let cool for at least 10 minutes before slicing. For cleaner slices, cool completely before serving.

Notes

Swap cranberries with a berry medley (raspberries, blackberries) for variation.

Mix chopped nuts like pecans or walnuts into the crumble for added texture.

Add a splash of vanilla extract to enhance the flavor of the crust.
