Ingredients
1 pound ground beef
2 cups (370 g) long-grain white rice, uncooked
2 cans (10.5 ounces each) French onion soup
2 cans (10.5 ounces each) beef consomme
½ cup (1 stick / 113 g) unsalted butter, sliced into pats
Chopped chives, for garnish (optional)
Instructions
- Preheat the oven to 425°F. Spray a 9x13-inch baking dish with nonstick cooking spray.
- Brown the ground beef in a medium skillet over medium heat, about 8-10 minutes. Drain excess grease.
- Layer the cooked beef evenly in the baking dish, then top with uncooked rice.
- Pour the French onion soup and beef consomme over the beef and rice layers. Stir gently to combine.
- Place pats of butter evenly on top of the mixture.
- Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 30 minutes until rice is tender and fully cooked.
- Garnish with chopped chives before serving, if desired.
Notes
Storage: Store leftovers in an airtight container in the fridge for 3-4 days. Reheat in the microwave or oven at 350°F for 15-20 minutes.
Freezing: Casserole can be frozen for up to 2-3 months. Thaw in the fridge overnight before reheating.
Substitutes: Ground turkey or chicken can replace beef. Beef broth or stock can substitute beef consomme.
