Ingredients
1/2 cup (1 stick) unsalted butter, melted
1 cup granulated sugar
1 tablespoon lemon zest
1/2 cup fresh lemon juice
1 cup milk
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup boiling water
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking dish.
- In a large bowl, whisk together the melted butter, sugar, lemon zest, and lemon juice.
- Add the milk, flour, baking powder, and salt, stirring until well combined. The batter will be thick.
- Pour the batter into the prepared baking dish, spreading it out evenly.
- Carefully pour the boiling water over the top of the batter. Do not stir – the water will create the cobbler’s sauce.
