Description

This Easy Lemon Cobbler is the perfect dessert for any occasion, featuring a tangy lemon filling with a soft, cake-like topping. Bursting with citrusy goodness, it’s simple to prepare and can be enjoyed warm with a scoop of vanilla ice cream or whipped cream. Whether for a special gathering or a cozy treat, this cobbler will impress everyone with its refreshing flavor and comforting texture.

Ingredients

1/2 cup (1 stick) unsalted butter, melted

1 cup granulated sugar

1 tablespoon lemon zest

1/2 cup fresh lemon juice

1 cup milk

1 cup all-purpose flour

1 1/2 teaspoons baking powder

1/4 teaspoon salt

1/2 cup boiling water

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking dish.
  2. In a large bowl, whisk together the melted butter, sugar, lemon zest, and lemon juice.
  3. Add the milk, flour, baking powder, and salt, stirring until well combined. The batter will be thick.
  4. Pour the batter into the prepared baking dish, spreading it out evenly.
  5. Carefully pour the boiling water over the top of the batter. Do not stir – the water will create the cobbler’s sauce.
  6. Bake for 40-45 minutes, or until the top is golden brown and bubbly.
  7. Let the cobbler cool slightly before serving. Best served warm with a scoop of vanilla ice cream or whipped cream.
