Description

Fresh vegetable tortilla roll ups combine creamy cream cheese with crisp, colorful vegetables wrapped in soft tortillas. These quick, no-cook pinwheels make a light snack, lunchbox addition, or easy party appetizer.


Ingredients

4 large flour tortillas

1 cup cream cheese, softened

1 cup shredded carrots

1 cup baby spinach leaves

1/2 red bell pepper, thinly sliced

1/2 yellow bell pepper, thinly sliced

1/2 cucumber, julienned or thinly sliced

Salt to taste

Black pepper to taste


Instructions

  1. Lay the tortillas flat on a clean cutting board or work surface. If they are stiff, warm them in the microwave for about 10 seconds to make them easier to roll.
  2. Spread the softened cream cheese evenly over each tortilla, covering the surface all the way to the edges.
  3. Arrange the vegetables over the cream cheese starting with baby spinach, then shredded carrots, followed by sliced bell peppers and cucumber.
  4. Lightly season the vegetables with salt and black pepper.
  5. Roll each tortilla tightly from one end to the other to form a firm log.
  6. Wrap each roll in plastic wrap and place in the refrigerator for about 30 minutes to help them hold their shape.
  7. Remove from the refrigerator and slice into 1-inch pieces to create bite-sized pinwheels before serving.

Notes

Add sliced avocado for extra creaminess or swap spinach for arugula for a peppery flavor.

Mix herbs such as dill, chives, or garlic powder into the cream cheese for additional flavor.

Whole wheat or spinach tortillas can be used for added nutrition and color.

For extra protein, add thin slices of grilled chicken or turkey if desired.

Store leftovers wrapped tightly in plastic wrap inside an airtight container in the refrigerator for up to 2 days.
