Description

These frozen Greek yogurt peanut butter bites are creamy, crunchy, and coated in a crisp chocolate shell for a refreshing no-bake treat. Perfect for a quick snack or make-ahead dessert.


Ingredients

1 cup Greek yogurt

1/2 cup creamy peanut butter

1/3 cup honey or maple syrup

1/3 cup roasted peanuts

1 1/3 cups chocolate chips

2 teaspoons coconut oil

Flaky sea salt


Instructions

  1. In a mixing bowl, stir together the Greek yogurt, peanut butter, and honey or maple syrup until smooth and fully combined.
  2. Line a baking sheet with parchment paper and scoop small portions of the mixture onto the sheet, shaping them into small rounds.
  3. Press a few roasted peanuts onto the top of each portion.
  4. Freeze for about 2 hours, or until completely firm.
  5. Melt the chocolate chips with the coconut oil in a microwave-safe bowl in 30-second intervals, stirring between each until smooth.
  6. Dip each frozen bite into the melted chocolate or drizzle the chocolate over the top.
  7. Sprinkle flaky sea salt over the bites while the chocolate is still soft.
  8. Return to the freezer for about 20 minutes, or until the chocolate coating is fully set.

Notes

Use maple syrup instead of honey for a deeper flavor or to keep it vegetarian-friendly.

Swap creamy peanut butter for crunchy for added texture.

Try almonds, walnuts, or pecans instead of peanuts for variation.

Dark or milk chocolate can be used depending on sweetness preference.
