These frozen Greek yogurt peanut butter bites are creamy, crunchy, and coated in a crisp chocolate shell for a refreshing no-bake treat. Perfect for a quick snack or make-ahead dessert.
Ingredients
1 cup Greek yogurt
1/2 cup creamy peanut butter
1/3 cup honey or maple syrup
1/3 cup roasted peanuts
1 1/3 cups chocolate chips
2 teaspoons coconut oil
Flaky sea salt
Instructions
- In a mixing bowl, stir together the Greek yogurt, peanut butter, and honey or maple syrup until smooth and fully combined.
- Line a baking sheet with parchment paper and scoop small portions of the mixture onto the sheet, shaping them into small rounds.
- Press a few roasted peanuts onto the top of each portion.
- Freeze for about 2 hours, or until completely firm.
- Melt the chocolate chips with the coconut oil in a microwave-safe bowl in 30-second intervals, stirring between each until smooth.
- Dip each frozen bite into the melted chocolate or drizzle the chocolate over the top.
- Sprinkle flaky sea salt over the bites while the chocolate is still soft.
- Return to the freezer for about 20 minutes, or until the chocolate coating is fully set.
