Description

Galette des Rois is a classic French pastry made with flaky puff pastry and a rich almond frangipane filling. The golden crust and smooth almond cream create an elegant dessert traditionally served during Epiphany.


Ingredients

2 sheets puff pastry, thawed

1 cup almond flour

1/2 cup granulated sugar

1/2 cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1 tablespoon all-purpose flour

1 egg yolk

1 tablespoon milk

pinch of salt


Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat the softened butter and sugar together until light and creamy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the almond flour, all-purpose flour, vanilla extract, and a pinch of salt until a smooth frangipane cream forms.
  5. Place one sheet of puff pastry on the prepared baking sheet and spread the almond filling in the center, leaving about a 1-inch border.
  6. Lightly brush the edges with water and place the second sheet of puff pastry over the top. Press the edges firmly to seal.
  7. Score decorative patterns on the top of the pastry using a knife without cutting through.
  8. Whisk the egg yolk with the milk and brush the mixture over the pastry.
  9. Bake for 30 to 35 minutes until puffed and golden brown.
  10. Allow the galette to cool slightly before slicing and serving.

Notes

Add a small amount of almond extract for a stronger almond flavor.

Mix orange zest into the frangipane for a bright citrus note.

Spread a thin layer of raspberry jam under the filling for a fruit variation.

Sprinkle sliced almonds on top before baking for added crunch.

Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to 4 days.

Reheat in a 300°F (150°C) oven for 8–10 minutes to restore crispness.

You can freeze the assembled unbaked galette and bake directly from frozen, adding a few extra minutes.
