Description
Galette des Rois is a classic French pastry made with flaky puff pastry and a rich almond frangipane filling. The golden crust and smooth almond cream create an elegant dessert traditionally served during Epiphany.
Ingredients
2 sheets puff pastry, thawed
1 cup almond flour
1/2 cup granulated sugar
1/2 cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
1 tablespoon all-purpose flour
1 egg yolk
1 tablespoon milk
pinch of salt
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a mixing bowl, beat the softened butter and sugar together until light and creamy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the almond flour, all-purpose flour, vanilla extract, and a pinch of salt until a smooth frangipane cream forms.
- Place one sheet of puff pastry on the prepared baking sheet and spread the almond filling in the center, leaving about a 1-inch border.
- Lightly brush the edges with water and place the second sheet of puff pastry over the top. Press the edges firmly to seal.
- Score decorative patterns on the top of the pastry using a knife without cutting through.
- Whisk the egg yolk with the milk and brush the mixture over the pastry.
- Bake for 30 to 35 minutes until puffed and golden brown.
- Allow the galette to cool slightly before slicing and serving.
Notes
Add a small amount of almond extract for a stronger almond flavor.
Mix orange zest into the frangipane for a bright citrus note.
Spread a thin layer of raspberry jam under the filling for a fruit variation.
Sprinkle sliced almonds on top before baking for added crunch.
Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to 4 days.
Reheat in a 300°F (150°C) oven for 8–10 minutes to restore crispness.
You can freeze the assembled unbaked galette and bake directly from frozen, adding a few extra minutes.
