Ingredients

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

2 tablespoons unsalted butter

4 cloves garlic, minced

2 cups mixed vegetables (e.g., bell peppers, zucchini, cherry tomatoes)

Salt and pepper to taste

1 tablespoon fresh parsley, chopped (optional for garnish)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, toss the mixed vegetables with olive oil, salt, and pepper. Spread them out evenly on a baking sheet.
  3. Roast the vegetables for 15-20 minutes or until tender and slightly caramelized.
