Description

These golden baked salmon bites are crispy on the outside, tender on the inside, and paired with a velvety avocado drizzle for the perfect balance of flavor and texture. A healthy, easy-to-make dish, they’re great as an appetizer, main course, or meal prep option. Since they’re baked instead of fried, they’re a nutritious alternative to traditional seafood bites.


Ingredients

For the Salmon Bites:

1 lb salmon fillet, cut into bite-sized cubes

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 cup breadcrumbs (preferably panko)

1 tablespoon fresh parsley, chopped

For the Avocado Drizzle:

1 ripe avocado

2 tablespoons plain Greek yogurt

1 tablespoon lime juice

1/4 teaspoon garlic powder

Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone mat.
  2. In a bowl, mix olive oil, garlic powder, paprika, salt, and black pepper. Toss the salmon cubes in the mixture until evenly coated.
  3. Sprinkle breadcrumbs over the salmon and gently toss to ensure a crispy coating.
  4. Arrange the salmon bites in a single layer on the prepared baking sheet.
  5. Bake for 12-15 minutes, until golden brown and cooked through.
  6. While baking, prepare the avocado drizzle. Blend together avocado, Greek yogurt, lime juice, garlic powder, salt, and pepper until smooth.
  7. Once the salmon bites are done, remove from the oven and sprinkle with fresh parsley.
  8. Serve warm with the creamy avocado drizzle.

Notes

For extra spice, add cayenne or red pepper flakes to the seasoning mix.

For a citrus twist, swap lime juice with lemon juice.

Make it gluten-free by using GF panko or almond flour.

For a dairy-free option, substitute Greek yogurt with coconut milk or dairy-free yogurt.
