Ingredients
For the Salmon Bites:
1 lb salmon fillet, cut into bite-sized cubes
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 cup breadcrumbs (preferably panko)
1 tablespoon fresh parsley, chopped
For the Avocado Drizzle:
1 ripe avocado
2 tablespoons plain Greek yogurt
1 tablespoon lime juice
1/4 teaspoon garlic powder
Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone mat.
- In a bowl, mix olive oil, garlic powder, paprika, salt, and black pepper. Toss the salmon cubes in the mixture until evenly coated.
- Sprinkle breadcrumbs over the salmon and gently toss to ensure a crispy coating.
- Arrange the salmon bites in a single layer on the prepared baking sheet.
- Bake for 12-15 minutes, until golden brown and cooked through.
- While baking, prepare the avocado drizzle. Blend together avocado, Greek yogurt, lime juice, garlic powder, salt, and pepper until smooth.
- Once the salmon bites are done, remove from the oven and sprinkle with fresh parsley.
- Serve warm with the creamy avocado drizzle.
Notes
For extra spice, add cayenne or red pepper flakes to the seasoning mix.
