Ingredients

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1/4 cup fresh parsley, chopped (for garnish)

For the Creamy Garlic Sauce:

1/2 cup mayonnaise

2 tablespoons Greek yogurt

2 cloves garlic, minced

1 tablespoon lemon juice

Salt and pepper to taste


Instructions

  1. Place the chicken pieces in a large bowl. Add the olive oil, garlic powder, onion powder, paprika, salt, and pepper, and toss everything until the chicken is well coated.
  2. Preheat the grill to medium-high heat. Thread the chicken onto skewers for easier grilling (optional).
  3. Grill the chicken bites for about 8-10 minutes, turning occasionally, until fully cooked with a nice char on the outside.
  4. While the chicken is grilling, prepare the creamy garlic sauce by combining mayonnaise, Greek yogurt, minced garlic, lemon juice, salt, and pepper in a small bowl. Mix until smooth.
  5. Once the chicken is done, remove it from the grill and let it rest for a couple of minutes before serving.
  6. Drizzle the creamy garlic sauce over the chicken or serve it on the side for dipping. Garnish with fresh parsley for added color and flavor.

Notes

If you prefer a spicier version, add chili powder or cayenne pepper to the seasoning mix.

For a sweeter twist, marinate the chicken in a bit of honey and soy sauce before grilling.

Make the creamy garlic sauce ahead of time—it tastes even better after a few hours or overnight.

Leftovers can be stored in airtight containers in the fridge for up to 3-4 days.

If you don't have a grill, use a grill pan or bake the chicken in the oven at 400°F (200°C) for 15-20 minutes.
