Description
A flavorful Grilled Chicken Wrap featuring smoky grilled chicken, fresh veggies, and creamy, spicy chipotle mayo wrapped in a soft tortilla. Perfect for a quick, healthy lunch or dinner.
Ingredients
2 chicken breasts
1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon garlic powder
Salt and pepper to taste
4 whole wheat or flour tortillas
1 cup lettuce, shredded
1 tomato, sliced
1/2 cucumber, sliced
1/4 red onion, thinly sliced
1/4 cup mayonnaise
1 tablespoon chipotle in adobo sauce (from a can)
1 teaspoon lime juice
1/2 teaspoon garlic powder
Salt to taste
Instructions
- Preheat the grill or grill pan over medium-high heat.
- Rub the chicken breasts with olive oil, paprika, garlic powder, salt, and pepper.
- Grill the chicken for about 6-7 minutes per side, or until it reaches an internal temperature of 165°F (74°C).
- While the chicken cooks, mix mayonnaise, chipotle in adobo sauce, lime juice, garlic powder, and salt in a small bowl to make the chipotle mayo. Adjust seasoning to taste.
- Once the chicken is cooked, remove it from the grill and let it rest for a few minutes before slicing it into thin strips.
- To assemble the wrap, place a tortilla on a flat surface and layer it with shredded lettuce, sliced tomato, cucumber, and red onion.
- Add the grilled chicken strips on top and drizzle with the homemade chipotle mayo.
- Roll up the tortilla tightly and cut it in half.
Notes
Leftover wraps can be stored in an airtight container in the fridge for up to 2 days. It's best to store veggies, chicken, and chipotle mayo separately from the tortilla.
The chipotle mayo can be made ahead and stored in the fridge for up to a week.
For a lighter option, swap the tortilla for a lettuce wrap.
Grilled chicken can be frozen for up to 3 months if wrapped tightly.
