Description

A flavorful Grilled Chicken Wrap featuring smoky grilled chicken, fresh veggies, and creamy, spicy chipotle mayo wrapped in a soft tortilla. Perfect for a quick, healthy lunch or dinner.


Ingredients

2 chicken breasts

1 tablespoon olive oil

1 teaspoon paprika

1/2 teaspoon garlic powder

Salt and pepper to taste

4 whole wheat or flour tortillas

1 cup lettuce, shredded

1 tomato, sliced

1/2 cucumber, sliced

1/4 red onion, thinly sliced

1/4 cup mayonnaise

1 tablespoon chipotle in adobo sauce (from a can)

1 teaspoon lime juice

1/2 teaspoon garlic powder

Salt to taste


Instructions

  1. Preheat the grill or grill pan over medium-high heat.
  2. Rub the chicken breasts with olive oil, paprika, garlic powder, salt, and pepper.
  3. Grill the chicken for about 6-7 minutes per side, or until it reaches an internal temperature of 165°F (74°C).
  4. While the chicken cooks, mix mayonnaise, chipotle in adobo sauce, lime juice, garlic powder, and salt in a small bowl to make the chipotle mayo. Adjust seasoning to taste.
  5. Once the chicken is cooked, remove it from the grill and let it rest for a few minutes before slicing it into thin strips.
  6. To assemble the wrap, place a tortilla on a flat surface and layer it with shredded lettuce, sliced tomato, cucumber, and red onion.
  7. Add the grilled chicken strips on top and drizzle with the homemade chipotle mayo.
  8. Roll up the tortilla tightly and cut it in half.

Notes

Leftover wraps can be stored in an airtight container in the fridge for up to 2 days. It's best to store veggies, chicken, and chipotle mayo separately from the tortilla.

The chipotle mayo can be made ahead and stored in the fridge for up to a week.

For a lighter option, swap the tortilla for a lettuce wrap.

Grilled chicken can be frozen for up to 3 months if wrapped tightly.
