Description

These Healthy 3-Ingredient Date Cookies are a simple, naturally sweet treat made with dates, oats, and almond butter. They are vegan, gluten-free, and dairy-free, perfect for a healthy snack or dessert.


Ingredients

1 cup pitted dates

1 cup rolled oats

1/4 cup almond butter


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a food processor, blend the pitted dates until a thick paste forms.
  3. Add the rolled oats and almond butter to the food processor and pulse until everything is well combined.
  4. Scoop tablespoon-sized portions of the dough and roll them into balls. Then, flatten them slightly on the baking sheet.
  5. Bake for 10-12 minutes, or until the edges are golden brown.
  6. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to a week, or freeze for up to a month.

To reheat, microwave for a few seconds or enjoy at room temperature.

Can swap almond butter with peanut butter or other nut butters.

Feel free to add optional ingredients like chocolate chips, cinnamon, or chopped nuts for variety.
