Ingredients
4 ripe peaches, peeled and chopped
1 cup heavy cream
1 cup whole milk
3/4 cup sugar
1 teaspoon vanilla extract
1 tablespoon lemon juice
Pinch of salt
Instructions
- Puree the chopped peaches in a blender or food processor until smooth.
- In a saucepan over medium heat, combine the heavy cream, whole milk, and sugar, stirring until the sugar dissolves.
- Once the mixture is warm (but not boiling), remove from heat and let cool slightly.
- Stir in the peach puree, vanilla extract, lemon juice, and a pinch of salt, mixing until fully combined.
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions (about 20-25 minutes).
- Once the ice cream reaches a soft-serve consistency, transfer to a container and freeze for at least 4 hours or until firm.
