Description

Soft, buttery vanilla cookies with a delicate crumb and classic fork pattern. These simple homemade cookies are lightly sweet, comforting, and perfect with tea or coffee.


Ingredients

1 cup self raising flour

1/2 cup unsalted butter

1/2 cup icing sugar

3 Tbsp cornflour

1 tsp vanilla extract

1/4 tsp salt

2 Tbsp milk


Instructions

  1. Preheat the oven to 170°C and line a baking tray with parchment paper.
  2. Place the butter, icing sugar, and vanilla extract in a large bowl. Mix until the mixture becomes pale, light, and creamy.
  3. Add the self raising flour, cornflour, and salt to the bowl. Mix gently until a soft dough forms.
  4. If the dough feels crumbly, add a little milk to bring it together. If it feels too sticky, add a small sprinkle of extra flour.
  5. Scoop about one tablespoon of dough and roll it between your hands to form smooth balls.
  6. Place the dough balls on the prepared baking tray, leaving space between each one.
  7. Gently press each dough ball with a fork to create the classic cookie pattern.
  8. Bake for 15–18 minutes, until the edges turn lightly golden.
  9. Allow the cookies to cool completely on the tray before serving so they firm up properly.

Notes

Add lemon zest for a bright citrus flavor variation.

Dip half of each cooled cookie in melted chocolate for a richer treat.

A pinch of cinnamon or a few drops of almond extract can be used instead of vanilla for a different flavor.

If cookies spread too much, chill the dough for about 10 minutes before baking.

Store cookies in an airtight container at room temperature for 4–5 days.

Cookies can be frozen in a sealed container for up to 2 months and thawed at room temperature.

Warm a cookie in the microwave for 5–8 seconds to restore its soft, buttery texture.
