Description

Ingredients

1 cup cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 cup mashed sweet potato (about 1 medium-sized sweet potato)

1/4 cup honey

1/4 cup milk

1/4 cup unsalted butter, melted

2 large eggs

1/2 cup sour cream

1 teaspoon vanilla extract

For the Honey Butter:

1/4 cup unsalted butter, softened

2 tablespoons honey


Instructions

  1. Preheat your oven to 375°F (190°C). Grease or line a 9x9-inch baking dish with parchment paper.
  2. In a large bowl, whisk together the cornmeal, flour, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, combine the mashed sweet potato, honey, milk, melted butter, eggs, sour cream, and vanilla extract. Stir until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Pour the batter into the prepared baking dish and spread it evenly.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
  7. While the cornbread is baking, prepare the honey butter by whisking together the softened butter and honey in a small bowl until smooth.
  8. Once the cornbread is done, remove it from the oven and let it cool slightly before serving. Top each slice with a dollop of honey butter.

Vegan Version: Replace eggs with flax eggs and use non-dairy milk and butter for a vegan-friendly option.
