Description

A comforting bowl with honey garlic chicken paired with crispy roasted potatoes, offering a perfect balance of sweet and savory flavors. Ideal for a cozy dinner or meal prep.


Ingredients

2 chicken breasts, boneless and skinless

1 tablespoon olive oil

1 tablespoon soy sauce

2 tablespoons honey

3 cloves garlic, minced

1 teaspoon lemon juice

1/2 teaspoon ground ginger

4 medium potatoes, diced

1 tablespoon olive oil (for potatoes)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together the soy sauce, honey, garlic, lemon juice, and ground ginger to make the marinade for the chicken.
  3. Place the chicken breasts in a resealable bag or shallow dish and pour the marinade over. Seal and refrigerate for at least 30 minutes (or overnight for more flavor).
  4. While the chicken marinates, prepare the potatoes. Toss the diced potatoes with 1 tablespoon olive oil, salt, and pepper. Spread them evenly on a baking sheet.
  5. Roast the potatoes for 25-30 minutes, flipping halfway through, until golden and crispy.
  6. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Remove the chicken from the marinade and cook for 6-7 minutes per side, or until fully cooked through and the internal temperature reaches 165°F (75°C).
  7. Once the chicken is cooked, let it rest for a few minutes before slicing it into strips.
  8. Assemble the bowl: place a generous serving of roasted potatoes in the bottom, top with sliced honey garlic chicken, and garnish with freshly chopped parsley.
  9. Serve warm and enjoy!

Notes

For a vegetarian version, replace chicken with grilled tofu or chickpeas.

Add vegetables like bell peppers, carrots, or zucchini to the roasted potatoes for extra flavor.

For a spicy twist, add red pepper flakes or sriracha to the honey garlic marinade.

If reheating, return potatoes to the oven for a few minutes to regain their crispiness.
