Description
A quick and flavorful stir-fry made with ground beef, broccoli, and a sweet garlic soy sauce. Perfect for busy weeknights and ready in under 30 minutes.
Ingredients
1 pound ground beef
4 cups broccoli florets (fresh or frozen)
3 cloves garlic, minced
1/3 cup honey
1/3 cup soy sauce (low sodium if preferred)
1 tablespoon rice vinegar
1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
1 tablespoon vegetable oil
Cooked rice, for serving
Instructions
- Heat the vegetable oil in a large skillet over medium-high heat.
- Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
- Add the minced garlic and cook for about 1 minute until fragrant.
- Add the broccoli and stir-fry for 3–4 minutes. If using fresh broccoli, cover the skillet for a minute to help it steam.
- In a small bowl, whisk together the honey, soy sauce, and rice vinegar.
- Pour the sauce over the beef and broccoli, stirring to combine.
- Add the cornstarch slurry and cook for 1–2 minutes until the sauce thickens and becomes glossy.
- Serve hot over cooked rice.
Notes
For extra crunch and color, add red bell peppers or shredded carrots.
Add red pepper flakes or sriracha for heat.
Swap ground beef with ground turkey or crumbled tofu for a lighter option.
Reheat leftovers in a skillet to preserve texture.
Use tamari for a gluten-free version.
