Description

This Honey Lavender Ice Cream combines creamy richness with the sweet notes of honey and the floral aroma of lavender for a refreshing and unique dessert.


Ingredients

1 cup heavy cream

1 cup whole milk

1/2 cup honey

2 tablespoons dried lavender buds

4 large egg yolks

1/2 teaspoon vanilla extract

Pinch of salt


Instructions

  1. In a medium saucepan, combine the heavy cream, whole milk, honey, and lavender buds. Heat over medium heat, stirring occasionally, until the mixture begins to simmer.
  2. Remove the saucepan from heat and cover. Let the lavender steep in the mixture for 10-15 minutes, depending on how strong you want the lavender flavor.
  3. Strain the lavender from the cream mixture and return the liquid to the saucepan.
  4. In a separate bowl, whisk the egg yolks. Slowly pour a small amount of the warm cream mixture into the egg yolks, whisking constantly to temper them.
  5. Gradually add the egg yolk mixture back into the saucepan, whisking continuously.
  6. Cook the mixture over low heat, stirring constantly until it thickens enough to coat the back of a spoon (about 5-7 minutes).
  7. Remove from heat and stir in vanilla extract and a pinch of salt.
  8. Let the mixture cool to room temperature, then chill in the refrigerator for at least 4 hours or overnight.
  9. Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
  10. Transfer the ice cream to an airtight container and freeze for at least 4 hours, or until firm.

Notes

If you prefer a less sweet ice cream, reduce the honey by 1-2 tablespoons.

For a dairy-free version, substitute the heavy cream and whole milk with coconut cream and almond milk.

For a stronger lavender flavor, steep the lavender buds for 15 minutes or use 3 tablespoons of fresh lavender.

If you don't have an ice cream maker, freeze the mixture in a shallow dish and stir every 30 minutes until it reaches a soft-serve consistency.
