Ingredients
4 salmon fillets (about 6 oz each)
1 cup fresh pineapple chunks (or canned, drained)
3 tablespoons honey
2 tablespoons soy sauce
1 tablespoon lime juice
2 cloves garlic, minced
1 teaspoon grated fresh ginger
1 tablespoon olive oil
Salt and pepper to taste
Fresh cilantro or green onions, for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a blender or food processor, combine the pineapple chunks, honey, soy sauce, lime juice, garlic, and ginger. Blend until smooth to create the glaze.
- Season the salmon fillets with salt and pepper on both sides.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear the salmon fillets for 2-3 minutes per side until golden brown.
- Pour the pineapple honey glaze over the salmon in the skillet.
- Transfer the skillet to the preheated oven and bake for 8-10 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Garnish with fresh cilantro or green onions if desired. Serve immediately with rice or steamed vegetables.
Notes
For a spicy kick, add chili flakes or sriracha to the glaze.
Swap lime juice for lemon juice for a different citrus flavor.
Add diced bell peppers or snap peas to the skillet before baking for extra crunch and color.
Store leftovers in an airtight container in the fridge for up to 2 days.
Reheat gently with a splash of water or extra glaze to keep the salmon moist.
Frozen salmon should be fully thawed before cooking for best results.
