Ingredients

1 1/2 cups graham cracker crumbs

1/4 cup sugar

1/2 cup melted butter

8 oz cream cheese, softened

1/4 cup powdered sugar

1 tsp vanilla extract

1/2 cup fresh strawberries, finely chopped

1/2 cup white chocolate chips

1 tbsp heavy cream

1/4 cup crushed graham crackers (for topping)

1 tbsp sugar (for topping)


Instructions

  1. Prepare the Crust

    • Preheat the oven to 350°F (175°C).
    • In a bowl, mix graham cracker crumbs, sugar, and melted butter.
    • Press firmly into the bottom of a greased 8x8-inch baking dish.
    • Bake for 8-10 minutes or until golden brown. Let cool.
  2. Make the Cheesecake Filling

    • In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
    • Gently fold in chopped strawberries.
  3. Assemble the Bites

    • Spread the cheesecake mixture evenly over the cooled crust.
  4. Prepare the Topping

    • In a saucepan over low heat, melt white chocolate chips with heavy cream, stirring until smooth.
    • Drizzle melted white chocolate over the cheesecake layer.
    • Sprinkle crushed graham crackers and sugar on top.
  5. Chill and Serve

    • Refrigerate for at least 2 hours to set.
    • Once firm, cut into bite-sized squares and serve.

Notes

For cleaner slices: Chill longer and use a sharp knife dipped in warm water.

For a no-bake version: Skip baking the crust and freeze instead of refrigerating.
