Ingredients

2 tablespoons olive oil

1 small onion, diced

3 cloves garlic, minced

2 carrots, peeled and sliced

2 celery stalks, sliced

1 teaspoon dried oregano

1 teaspoon dried thyme

1/2 teaspoon red pepper flakes (optional)

6 cups chicken broth

2 cups shredded cooked chicken (rotisserie works well)

1 can (15 oz) cannellini beans, drained and rinsed

1 cup small pasta (ditalini or orzo)

1/4 cup fresh parsley, chopped

1/4 cup grated Parmesan cheese

Salt and black pepper to taste

Juice of 1 lemon


Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion and sauté for 3-4 minutes until softened.
  2. Stir in garlic, carrots, celery, oregano, thyme, and red pepper flakes. Cook for 3-4 minutes until fragrant.
