Description

These Keto Crispy Cinnamon Cream Cheese Roll Ups are a low-carb, crispy, and creamy treat perfect for breakfast or a guilt-free snack. Lightly sweetened with cinnamon and a touch of sweetness, they’re easy to make and delightfully crunchy.


Ingredients

4 low-carb tortillas or keto-friendly wraps

8 oz cream cheese, softened

2 tablespoons powdered erythritol (or preferred keto sweetener)

1 teaspoon ground cinnamon

1 teaspoon vanilla extract

2 tablespoons butter

Optional: a pinch of salt


Instructions

  1. In a small bowl, mix together the softened cream cheese, powdered erythritol, cinnamon, vanilla extract, and a pinch of salt until smooth and creamy.
  2. Lay out the low-carb tortillas flat on a clean surface.
  3. Spread an even layer of the cream cheese mixture onto each tortilla, covering it completely but not too thick.
  4. Carefully roll up each tortilla tightly into a log shape.
  5. Heat butter in a non-stick skillet over medium heat.
  6. Place the roll-ups seam-side down in the skillet and cook for 2-3 minutes, or until golden and crispy on one side.
  7. Turn the roll-ups gently to brown all sides, cooking another 2-3 minutes until crisp and warmed through.

Notes

To switch things up, you can spread a thin layer of almond butter or peanut butter on the tortilla before adding the cream cheese mixture for an extra nutty flavor.
