Ingredients

For the Bread:

1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

½ cup unsalted butter, melted

1 cup granulated sugar

2 tablespoons lemon zest (about 2 lemons)

2 large eggs

½ cup milk

2 tablespoons fresh lemon juice

1 cup fresh or frozen blueberries

1 tablespoon flour (for coating blueberries)

For the Lemon Glaze:

½ cup powdered sugar

2 tablespoons fresh lemon juice


Instructions

  1. Preheat & Prepare:

    • Preheat oven to 350°F (175°C).
    • Grease and flour a 9x5-inch loaf pan.
  2. Mix Dry Ingredients:

    • In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. Prepare Sugar Mixture:

    • In a large bowl, rub sugar and lemon zest together with your fingers until fragrant.
  4. Combine Wet Ingredients:

    • Add melted butter to the sugar mixture and whisk until combined.
    • Beat in eggs one at a time, then mix in lemon juice and milk.
  5. Combine Wet & Dry Ingredients:

    • Gradually fold in the dry ingredients until just combined—do not overmix.
  6. Add Blueberries:

    • Toss blueberries in 1 tablespoon of flour to prevent sinking.
    • Gently fold them into the batter.
  7. Bake:

    • Pour the batter into the prepared loaf pan and smooth the top.
    • Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool:

    • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack.
  9. Make the Glaze:

    • Whisk together powdered sugar and lemon juice until smooth.
    • Drizzle over the cooled bread before slicing.

Notes

Use frozen blueberries straight from the freezer (no need to thaw).

For a lighter option, skip the glaze and dust with powdered sugar.

Store at room temperature for up to 3 days, in the fridge for a week, or freeze for up to 3 months.

To reheat, microwave a slice for 10-15 seconds.
