Description

These Lemon Blueberry Delights are a refreshing and sweet dessert bar made with juicy blueberries and zesty lemon. They're soft, cake-like, and completely dairy-free, naturally sweetened, and full of wholesome ingredients.


Ingredients

1 cup spelt flour or all-purpose flour

1/2 tsp baking soda

1/2 tsp salt

1/2 cup coconut sugar or regular sugar

1/2 cup unsweetened applesauce

1/4 cup coconut oil, melted

2 tbsp lemon juice

1 tsp lemon zest

1 tsp pure vanilla extract

1 cup fresh or frozen blueberries (if frozen, do not thaw)

Optional: powdered sugar or coconut whipped cream for topping


Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, salt, and coconut sugar.
  3. In a separate bowl, mix the applesauce, melted coconut oil, lemon juice, lemon zest, and vanilla extract until well combined.
  4. Add the wet ingredients to the dry ingredients and stir until just mixed — be careful not to overmix.
  5. Gently fold in the blueberries.
  6. Pour the batter into the prepared pan and spread it evenly.
  7. Bake for 28–32 minutes, or until a toothpick inserted into the center comes out mostly clean.
  8. Let it cool completely in the pan before slicing into bars.
  9. Optionally dust with powdered sugar or serve with coconut whipped cream for an extra treat.

Notes

If using frozen blueberries, do not thaw them before adding to the batter.

For a gluten-free version, substitute spelt flour with a gluten-free all-purpose flour blend that includes xanthan gum.

Feel free to swap coconut sugar for regular sugar if preferred.

Serve with coconut whipped cream for a richer dessert experience.

These bars can be stored at room temperature for 2-3 days or in the fridge for up to a week.

Freeze for up to 3 months for longer storage.
