Description
These Lemon Blueberry Delights are a refreshing and sweet dessert bar made with juicy blueberries and zesty lemon. They're soft, cake-like, and completely dairy-free, naturally sweetened, and full of wholesome ingredients.
Ingredients
1 cup spelt flour or all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
1/2 cup coconut sugar or regular sugar
1/2 cup unsweetened applesauce
1/4 cup coconut oil, melted
2 tbsp lemon juice
1 tsp lemon zest
1 tsp pure vanilla extract
1 cup fresh or frozen blueberries (if frozen, do not thaw)
Optional: powdered sugar or coconut whipped cream for topping
Instructions
- Preheat the oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
 - In a large bowl, whisk together the flour, baking soda, salt, and coconut sugar.
 - In a separate bowl, mix the applesauce, melted coconut oil, lemon juice, lemon zest, and vanilla extract until well combined.
 - Add the wet ingredients to the dry ingredients and stir until just mixed — be careful not to overmix.
 - Gently fold in the blueberries.
 - Pour the batter into the prepared pan and spread it evenly.
 - Bake for 28–32 minutes, or until a toothpick inserted into the center comes out mostly clean.
 - Let it cool completely in the pan before slicing into bars.
 - Optionally dust with powdered sugar or serve with coconut whipped cream for an extra treat.
 
Notes
If using frozen blueberries, do not thaw them before adding to the batter.
For a gluten-free version, substitute spelt flour with a gluten-free all-purpose flour blend that includes xanthan gum.
Feel free to swap coconut sugar for regular sugar if preferred.
Serve with coconut whipped cream for a richer dessert experience.
These bars can be stored at room temperature for 2-3 days or in the fridge for up to a week.
Freeze for up to 3 months for longer storage.
