Ingredients
1/4 cup olive oil
2 tablespoons unsalted butter
2 tablespoons capers, drained and rinsed
2 cloves garlic, minced
Zest and juice of 1 lemon
1/4 cup dry white wine (optional)
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil and butter in a small saucepan over medium heat.
- Add the minced garlic and cook for about 1 minute, until fragrant.
- Stir in the capers and cook for another 2 minutes, allowing them to release their flavor.
- Add the lemon zest and juice, and if you’re using white wine, pour it in now. Stir everything to combine.
- Let the sauce simmer for 2-3 minutes to let the flavors meld together.
- Season with salt and pepper to taste.
- Pour the sauce over your favorite dish and garnish with fresh parsley before serving.
Notes
If you prefer a creamy version, add a splash of heavy cream or half-and-half after simmering.
Switch herbs by using fresh thyme or dill for a different flavor.
For added heat, include red pepper flakes when cooking the garlic.
