Description

A tangy and savory sauce made with lemon, capers, and garlic, perfect for enhancing fish, chicken, or roasted vegetables.


Ingredients

1/4 cup olive oil

2 tablespoons unsalted butter

2 tablespoons capers, drained and rinsed

2 cloves garlic, minced

Zest and juice of 1 lemon

1/4 cup dry white wine (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)


Instructions

  1. Heat the olive oil and butter in a small saucepan over medium heat.
  2. Add the minced garlic and cook for about 1 minute, until fragrant.
  3. Stir in the capers and cook for another 2 minutes, allowing them to release their flavor.
  4. Add the lemon zest and juice, and if you’re using white wine, pour it in now. Stir everything to combine.
  5. Let the sauce simmer for 2-3 minutes to let the flavors meld together.
  6. Season with salt and pepper to taste.
  7. Pour the sauce over your favorite dish and garnish with fresh parsley before serving.

Notes

If you prefer a creamy version, add a splash of heavy cream or half-and-half after simmering.

Switch herbs by using fresh thyme or dill for a different flavor.

For added heat, include red pepper flakes when cooking the garlic.
