Description
Lemon Chicken Orzo is a light, flavorful dish combining tender chicken, zesty lemon sauce, and creamy orzo pasta, perfect for a refreshing weeknight dinner.
Ingredients
2 chicken breasts, boneless and skinless
1 tablespoon olive oil
1 teaspoon garlic, minced
1 cup orzo pasta
2 cups chicken broth
1 tablespoon lemon zest
1/4 cup fresh lemon juice
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
Salt and pepper to taste
2 tablespoons fresh parsley, chopped
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
 - Season the chicken breasts with salt and pepper. Cook for 6-7 minutes on each side until the chicken is golden and cooked through. Once done, remove the chicken from the skillet and set aside.
 - In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
 - Add the chicken broth to the skillet and bring it to a simmer. Stir in the orzo and cook for 8-10 minutes, stirring occasionally, until the orzo is tender and the broth has been absorbed.
 - While the orzo is cooking, slice the cooked chicken into thin strips.
 - Once the orzo is ready, reduce the heat to low and stir in the lemon zest, lemon juice, heavy cream, and Parmesan cheese.
 - Return the sliced chicken to the skillet and toss everything together until well combined. Taste and adjust seasoning with salt and pepper if needed.
 - Serve the orzo topped with fresh parsley.
 
Notes
This dish reheats well in a skillet or microwave. Add chicken broth or cream while reheating to avoid dryness.
For a gluten-free version, swap the orzo for gluten-free pasta.
To add more veggies, include spinach, peas, or asparagus after sautéing the garlic.
Serve with a side salad or roasted vegetables for a complete meal.
