Description

Lemon Cream Cheese Squares are a delightful treat that blends the tangy goodness of fresh lemon with the rich, creamy texture of cheesecake, all set on a buttery, melt-in-your-mouth crust.


Ingredients

1 ½ cups all-purpose flour

½ cup powdered sugar

½ cup butter, softened

8 oz cream cheese, softened

1 cup granulated sugar

2 large eggs

2 tablespoons all-purpose flour

1 teaspoon vanilla extract

1 tablespoon lemon zest

¼ cup fresh lemon juice

Powdered sugar for dusting


Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line an 8x8-inch baking pan with parchment paper, or lightly grease it with butter.
  2. In a medium-sized bowl, combine 1 ½ cups flour and ½ cup powdered sugar. Add the softened butter and mix until the dough forms a crumbly texture.
  3. Press the dough evenly into the bottom of the prepared baking pan to form the crust. Bake for 15-18 minutes, or until the crust is lightly golden.
  4. While the crust is baking, prepare the filling. In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  5. Add the granulated sugar, eggs, 2 tablespoons flour, vanilla extract, lemon zest, and lemon juice. Mix until the filling is smooth and well combined.
  6. Pour the cream cheese mixture over the baked crust and spread it evenly.
  7. Bake for 20-25 minutes, or until the center is set and the edges are lightly golden.
  8. Allow the bars to cool completely in the pan, then refrigerate for at least 2 hours before slicing.
  9. Dust with powdered sugar before serving, if desired.
