Description

Ingredients

1 cup unsalted butter, softened

1/2 cup powdered sugar

2 tablespoons lemon zest

2 tablespoons lemon juice

1 teaspoon vanilla extract

1/4 teaspoon salt

2 cups all-purpose flour

1/4 cup cornstarch

Extra powdered sugar for dusting


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a large bowl, cream together softened butter and powdered sugar for 2-3 minutes until light and fluffy.

  3. Stir in lemon zest, lemon juice, vanilla extract, and salt. Mix well.

  4. In a separate bowl, whisk together flour and cornstarch, then gradually add to the wet mixture. Stir until combined.

  5. Scoop out tablespoon-sized portions of dough, roll them into balls, and place them 1 inch apart on the baking sheet.

  6. Gently press each dough ball to slightly flatten.

  7. Bake for 12-15 minutes or until edges are golden.

  8. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

  9. Dust with powdered sugar before serving.

Notes

For a unique twist, try adding 1 teaspoon of dried lavender to the dough.

Swap lemon zest and juice for orange or lime for a citrus variation.

Add a simple glaze of powdered sugar and lemon juice for an extra sweet finish.
