Lemon Tiramisu is a refreshing, citrusy variation of the traditional Italian dessert, featuring layers of lemon mascarpone cream and ladyfingers, perfect for warm days.
Ingredients
1 package ladyfingers
1 cup heavy cream
1/2 cup mascarpone cheese
1/4 cup powdered sugar
1 tablespoon lemon zest
1/4 cup fresh lemon juice
1 teaspoon vanilla extract
1/2 cup lemon curd (optional for extra flavor)
Instructions
- Whisk together heavy cream, mascarpone cheese, powdered sugar, lemon zest, lemon juice, and vanilla extract in a large bowl until smooth and fluffy.
 - If desired, stir in lemon curd for extra lemon flavor.
 - Quickly dip ladyfingers into lemon juice and layer them in the bottom of a 9x9-inch dish.
 - Spread half of the mascarpone mixture over the ladyfingers in an even layer.
 - Repeat the process with another layer of dipped ladyfingers, followed by the remaining mascarpone mixture.
 - Cover and refrigerate for at least 4 hours, or overnight for best flavor.
 - Before serving, garnish with extra lemon zest or fresh berries for added flavor and color.
 
Notes
Make this dessert ahead of time, preferably 4 hours or overnight, for the best flavor and texture.
If you want a tropical twist, you can substitute lime juice for lemon juice, although it will alter the flavor.
Lemon curd is optional, but it intensifies the citrus flavor.
If making dairy-free, use coconut cream, dairy-free mascarpone, and dairy-free ladyfingers or sponge cake.
