Description

A bright and refreshing kale salad tossed with a zesty lemon-garlic dressing, crunchy croutons, and savory Parmesan cheese. This simple no-cook dish delivers bold flavor and satisfying texture in every bite.


Ingredients

2 bunches curly kale, stems removed

1 cup croutons, crushed

1/2 cup freshly grated Parmesan cheese

1/4 cup olive oil

1/4 cup lemon juice

3 cloves garlic, minced

1 teaspoon sea salt

1/2 teaspoon black pepper


Instructions

  1. Remove and discard the stems from the kale. Wash the leaves thoroughly, pat them dry, and place them into a large mixing bowl.
  2. Sprinkle the sea salt over the kale and gently massage the leaves with your hands for about 1 to 2 minutes until they soften and deepen in color.
  3. Finely crush or chop the croutons and add them to the bowl with the kale.
  4. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, and black pepper until well combined.
  5. Pour the dressing over the kale mixture, add the grated Parmesan cheese, and toss thoroughly until everything is evenly coated.
  6. Serve immediately or store in an airtight container in the refrigerator until ready to enjoy.

Notes

Massage the kale with salt to reduce bitterness and improve texture.

Add sliced avocado for extra creaminess and healthy fats.

For more protein, add grilled chicken or chickpeas.

To increase crunch, replace some croutons with toasted almonds, sunflower seeds, or pumpkin seeds.
