Description

Ingredients

1 cup all-purpose flour

1/2 cup granulated sugar

1/2 teaspoon baking powder

1/4 teaspoon salt

4 large eggs, separated

1/4 cup unsweetened applesauce

1 teaspoon vanilla extract

1/2 cup milk

1/4 teaspoon cream of tartar

1/4 cup powdered sugar


Instructions

  1. Preheat the oven to 325°F (163°C) and grease and flour an 8-inch round cake pan.
  2. Sift together the flour, sugar, baking powder, and salt in a medium bowl, then set aside.
  3. In another large bowl, whisk the egg yolks, applesauce, vanilla extract, and milk until smooth.
  4. Gradually fold the dry ingredients into the wet mixture, mixing gently until well combined.
  5. In a separate bowl, beat the egg whites and cream of tartar with an electric mixer until soft peaks form. Gradually add in the powdered sugar and continue beating until stiff peaks form.
  6. Carefully fold the egg whites into the batter in three additions, being mindful not to deflate the air bubbles in the whites.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake the cake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For a citrus twist, add lemon or orange zest to the batter.

For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend.
