Description

These Lucky Charms Chocolate Cookies are soft, chewy, and bursting with colorful marshmallows, making them the perfect fun and festive treat for any occasion—especially St. Patrick's Day! A delicious combination of rich chocolate dough and the sweet, colorful crunch of Lucky Charms marshmallows creates a whimsical, irresistible cookie everyone will love.

Ingredients

1 cup unsalted butter, softened

3/4 cup granulated sugar

3/4 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

1/2 cup cocoa powder

1 teaspoon baking soda

1/4 teaspoon salt

1 cup semisweet chocolate chips

1 1/2 cups Lucky Charms marshmallows (from the cereal)

Optional: 1/2 cup white chocolate chips or rainbow sprinkles for extra color

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, followed by the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in the chocolate chips and Lucky Charms marshmallows, ensuring they are evenly distributed throughout the dough.
  7. Using a cookie scoop or tablespoon, drop dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 8-10 minutes, or until the edges are slightly set, but the center is still soft.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  10. Optional: Decorate with white chocolate chips or rainbow sprinkles for extra flair!

Notes

You can substitute the Lucky Charms with any cereal that contains colorful marshmallows for a fun twist.

For a gluten-free version, swap the all-purpose flour with a gluten-free flour blend.

If you prefer, you can skip the chocolate chips and use only the marshmallows.
