Description

This Marry Me Chicken Pasta is a creamy, rich, and flavorful one-pan meal made with tender chicken, sun-dried tomatoes, Parmesan cheese, and pasta. It comes together in just 30 minutes and is perfect for both weeknight dinners and special occasions.


Ingredients

2 tablespoons olive oil

2 boneless, skinless chicken breasts, sliced into strips

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

3 cloves garlic, minced

1/2 cup sun-dried tomatoes, chopped

1 cup chicken broth

3/4 cup heavy cream

1/2 cup grated Parmesan cheese

1/2 teaspoon dried oregano

1/2 teaspoon dried thyme

8 ounces pasta (penne or fettuccine)

Fresh basil, for garnish


Instructions

  1. Cook the pasta in salted boiling water according to the package instructions. Reserve 1/2 cup of pasta water, then drain the pasta.
  2. Heat olive oil in a large skillet over medium-high heat. Season the chicken strips with salt, pepper, and paprika, and cook for 4–5 minutes per side until golden and cooked through. Transfer the chicken to a plate.
  3. In the same skillet, sauté the garlic and sun-dried tomatoes for about 1 minute until fragrant.
  4. Pour in the chicken broth and scrape up the browned bits from the bottom of the skillet. Stir in heavy cream, Parmesan, oregano, and thyme. Let it simmer for 2–3 minutes until slightly thickened.
  5. Return the cooked chicken to the skillet and toss to coat in the sauce.
  6. Add the cooked pasta and mix until everything is well combined. If the sauce is too thick, stir in some reserved pasta water to reach the desired consistency.
  7. Garnish with fresh basil and serve hot.

Notes

You can substitute chicken breasts with boneless, skinless chicken thighs for juicier meat.

Swap chicken for shrimp or tofu for pescatarian or vegetarian versions.

Add vegetables like spinach or mushrooms for extra nutrition.

Use red pepper flakes to add heat if desired.

Store leftovers in the fridge for up to 3 days. Reheat with a splash of broth or cream.
