Ingredients

For the Crispy Tofu:

1 block firm or extra-firm tofu, pressed and cubed

2 tbsp cornstarch (for crispiness)

1 tbsp olive oil

½ tsp garlic powder

½ tsp smoked paprika

Salt & black pepper to taste

For the Creamy Sauce:

1 tbsp olive oil

2 garlic cloves, minced

½ cup sun-dried tomatoes, chopped

1 tsp red pepper flakes (optional, for heat)

1 cup coconut milk or heavy cream

½ cup vegetable broth

¼ cup nutritional yeast (or grated Parmesan, if not vegan)

1 tsp Italian seasoning

1 tbsp lemon juice

½ tsp salt (or to taste)

Black pepper to taste

½ cup spinach or basil, chopped (for freshness)


Instructions

  1. Prepare the Tofu:

    • Press the tofu for 10-15 minutes to remove excess water.
    • Cut into cubes and toss with cornstarch, garlic powder, paprika, salt, and pepper.
    • Heat olive oil in a pan over medium heat and sear tofu until golden and crispy (about 3-4 minutes per side). Set aside.
  2. Make the Sauce:

    • In the same pan, heat olive oil and sauté garlic and sun-dried tomatoes for 1 minute.
    • Add red pepper flakes (if using), coconut milk, vegetable broth, nutritional yeast, Italian seasoning, lemon juice, salt, and pepper. Stir and simmer for 3-4 minutes until creamy.
  3. Combine & Serve:

    • Add crispy tofu back into the sauce and stir to coat.
    • Mix in spinach or basil and let it wilt.
    • Serve over pasta, rice, or crusty bread.

Notes

For a thicker sauce, simmer a bit longer or add 1 tsp cornstarch mixed with water.

For a richer, creamier sauce, swap out coconut milk for cashew cream.
