Description

Ingredients

1 cup cherry tomatoes, finely chopped

1/4 cup red onion, minced

2 tablespoons fresh basil, chopped

1 tablespoon balsamic vinegar

1 teaspoon olive oil

Salt and pepper, to taste

1 1/2 cups hummus (store-bought or homemade)

1/4 cup crumbled feta cheese

1/4 cup kalamata olives, sliced

1/4 cup marinated artichoke hearts, chopped

1/2 cucumber, sliced into rounds

1/2 red bell pepper, sliced

1/2 cup baby carrots

Pita chips or warm pita bread, for serving


Instructions

  1. In a medium bowl, combine chopped cherry tomatoes, minced red onion, fresh basil, balsamic vinegar, olive oil, salt, and pepper. Mix well and set aside to let the flavors meld.
  2. Spread the hummus evenly on a large serving platter or shallow bowl.
