Description

These Mediterranean chicken meatballs are a flavorful and healthy dish that combines lean chicken with Mediterranean herbs, garlic, and feta cheese. Perfect as a main dish or appetizer, they deliver a satisfying taste while staying light and nutritious.


Ingredients

1 lb ground chicken

1/2 cup feta cheese, crumbled

1/4 cup breadcrumbs (preferably whole wheat)

1 egg

2 cloves garlic, minced

1 tablespoon dried oregano

1 tablespoon fresh parsley, chopped

1 tablespoon fresh mint, chopped

1 tablespoon lemon zest

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons olive oil (for frying)


Instructions

  1. In a large mixing bowl, combine the ground chicken, feta cheese, breadcrumbs, egg, garlic, oregano, parsley, mint, lemon zest, salt, and pepper.
  2. Mix everything thoroughly until well combined.
  3. Form the mixture into 1-inch meatballs and set them aside.
  4. Heat the olive oil in a large skillet over medium heat.
  5. Add the meatballs to the skillet and cook for 7-10 minutes, turning occasionally, until golden brown and cooked through.
  6. Once cooked, remove the meatballs from the skillet and drain on paper towels.
  7. Serve the meatballs warm with a side of tzatziki sauce or a fresh Greek salad.

Notes

These meatballs can be stored in the fridge for up to 3 days.

They can also be frozen for up to 3 months and reheated when needed.

For a lower-fat option, you can bake the meatballs at 375°F (190°C) for 15-20 minutes instead of frying.

Ground turkey can be used instead of chicken if desired.

Serve with tzatziki, Greek salad, or pita bread for a complete meal.
