Description
These Mediterranean Spinach and Feta Cheese Crisps are light, savory bites with golden edges and a tender center. Made with fresh spinach, tangy feta, and almond flour, they are quick to prepare and perfect as a wholesome snack or elegant appetizer.
Ingredients
2 cups fresh spinach, finely chopped
1 cup feta cheese, crumbled
1/2 cup almond flour
1 large egg
1 tbsp olive oil
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the chopped spinach, crumbled feta, almond flour, egg, olive oil, garlic powder, salt, and black pepper. Mix thoroughly until a cohesive mixture forms.
- Scoop tablespoon-sized portions of the mixture onto the prepared baking sheet and gently flatten each into small rounds.
- Bake for 15 to 18 minutes, or until the edges turn golden and the tops are firm to the touch.
- Allow the crisps to cool for 5 minutes before serving to help them firm up and develop a crisp texture.
Notes
Add a pinch of dried oregano or basil for enhanced Mediterranean flavor.
Mix in crushed red pepper flakes for a touch of heat.
Add 1 to 2 tablespoons grated Parmesan for a cheesier texture.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat in a 350°F (175°C) oven for 5 to 7 minutes to restore crispness.
Frozen spinach can be used if fully thawed and excess moisture is squeezed out.
