Description

These Mediterranean Spinach and Feta Cheese Crisps are light, savory bites with golden edges and a tender center. Made with fresh spinach, tangy feta, and almond flour, they are quick to prepare and perfect as a wholesome snack or elegant appetizer.


Ingredients

2 cups fresh spinach, finely chopped

1 cup feta cheese, crumbled

1/2 cup almond flour

1 large egg

1 tbsp olive oil

1 tsp garlic powder

1/2 tsp salt

1/4 tsp black pepper


Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the chopped spinach, crumbled feta, almond flour, egg, olive oil, garlic powder, salt, and black pepper. Mix thoroughly until a cohesive mixture forms.
  3. Scoop tablespoon-sized portions of the mixture onto the prepared baking sheet and gently flatten each into small rounds.
  4. Bake for 15 to 18 minutes, or until the edges turn golden and the tops are firm to the touch.
  5. Allow the crisps to cool for 5 minutes before serving to help them firm up and develop a crisp texture.

Notes

Add a pinch of dried oregano or basil for enhanced Mediterranean flavor.

Mix in crushed red pepper flakes for a touch of heat.

Add 1 to 2 tablespoons grated Parmesan for a cheesier texture.

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheat in a 350°F (175°C) oven for 5 to 7 minutes to restore crispness.

Frozen spinach can be used if fully thawed and excess moisture is squeezed out.
