Ingredients

For the Chicken:

4 boneless, skinless chicken breasts

1 tablespoon olive oil

For the Cheese Sauce:

1 cup heavy cream

1 cup shredded cheddar cheese

1/2 cup shredded Monterey Jack cheese

1 tablespoon butter

1 teaspoon garlic powder

1/2 teaspoon chili powder

Salt and pepper to taste


Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.

  2. Season the chicken breasts with salt and pepper on both sides.

  3. Add the chicken breasts to the skillet and cook for 6-7 minutes per side, or until golden brown and fully cooked through.

  4. While the chicken is cooking, prepare the cheese sauce. In a separate saucepan, melt the butter over medium heat.

  5. Add the heavy cream to the saucepan and bring to a simmer, stirring frequently.

  6. Gradually add the shredded cheddar and Monterey Jack cheeses, stirring until smooth and creamy.

  7. Stir in the garlic powder, chili powder, salt, and pepper, and cook for another 2-3 minutes until the sauce thickens.

  8. Once the chicken is cooked, place it on serving plates and pour the cheese sauce generously over the top.

  9. Serve immediately with your favorite side dishes.

Notes

For added heat, add a pinch of cayenne pepper or chopped jalapeños to the cheese sauce.

To make it a grilled version, cook the chicken on the grill instead of a skillet for a smoky flavor.
