Description

These molten chocolate lava cakes feature a soft, delicate exterior with a rich, gooey chocolate center. An elegant yet simple dessert perfect for special occasions or satisfying chocolate cravings.


Ingredients

200 g dark chocolate

100 g unsalted butter

2 large eggs

2 egg yolks

100 g granulated sugar

1 teaspoon vanilla extract

50 g all-purpose flour

Pinch of salt

Butter for greasing

Cocoa powder for dusting


Instructions

  1. Preheat the oven to 220°C (430°F) and grease four ramekins with butter, then lightly dust with cocoa powder.
  2. Melt the dark chocolate and butter together in a heatproof bowl over a double boiler or in the microwave, stirring until smooth.
  3. In a separate bowl, whisk the eggs, egg yolks, and sugar until pale and slightly thickened.
  4. Stir the melted chocolate mixture into the egg mixture, then add the vanilla extract and mix well.
  5. Gently fold in the flour and salt until just combined.
  6. Divide the batter evenly among the prepared ramekins.
  7. Bake for 10 to 12 minutes, until edges are set but centers remain soft.
  8. Remove from the oven and let sit for 1 minute before carefully inverting onto plates.
  9. Serve immediately while warm for a gooey molten center.

Notes

Use high-quality dark or semi-sweet chocolate for best flavor.

Add a pinch of espresso powder to enhance chocolate richness.

Optional additions include orange zest or peppermint extract for variation.

Serve with berries, whipped cream, or vanilla ice cream.

Store leftovers in the refrigerator for up to 2 days and reheat briefly in the microwave.

Do not overbake to maintain the molten center.
