Ingredients
½ cup rolled oats
1 cup almond flour
2 scoops vanilla protein powder
¼ cup cream cheese (softened)
¼ cup Greek yogurt
2 Tbsp honey or maple syrup
½ cup fresh or frozen blueberries
1 tsp vanilla extract
¼ tsp salt
Instructions
- In a large bowl, combine rolled oats, almond flour, and vanilla protein powder. Mix well.
- In a separate bowl, blend softened cream cheese, Greek yogurt, honey or maple syrup, vanilla extract, and salt until smooth.
- Gently fold in the blueberries, being careful not to crush them.
- Gradually stir the dry ingredients into the wet mixture until a dough-like consistency forms.
- Using a tablespoon, scoop out portions and roll into small bite-sized balls.
- Place the bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
- Store the bites in an airtight container in the fridge or freeze for longer storage.
