Ingredients
1 1/2 cups rolled oats
1/2 cup peanut butter (natural or regular)
1/2 cup pure maple syrup or agave
1/4 cup unsweetened cocoa powder
1/4 tsp salt
1 tsp pure vanilla extract
1/2 cup dairy-free chocolate chips (optional, for topping)
Instructions
- Line an 8x8 inch pan with parchment paper for easy removal.
- In a medium saucepan over low heat, combine the peanut butter and maple syrup. Stir until melted and smooth.
- Remove the pan from the heat and stir in the vanilla extract, cocoa powder, and salt until well combined.
- Add the rolled oats and mix until everything is evenly coated.
- Press the mixture firmly and evenly into the prepared pan.
- If using, melt the dairy-free chocolate chips and spread them over the top of the oat mixture.
- Refrigerate the pan for at least 1 hour or until the bars are firm.
- Once chilled, slice into bars and enjoy.
Notes
Use certified gluten-free oats for a gluten-free version.
Swap peanut butter with almond, cashew, or sunflower seed butter for variation or allergies.
For added crunch, stir in chopped nuts or seeds.
