Description

These No-Bake Pecan Coconut Praline Cookies are a quick, easy, and indulgent treat, made with crunchy pecans, chewy coconut, and a touch of maple syrup sweetness. No baking required!


Ingredients

1 cup pecans, chopped

1 cup shredded coconut

1/2 cup unsweetened peanut butter

1/4 cup maple syrup

1/2 teaspoon vanilla extract

1/4 teaspoon salt


Instructions

  1. In a medium-sized bowl, combine the chopped pecans and shredded coconut.
  2. In a separate microwave-safe bowl, heat the peanut butter and maple syrup together in the microwave for 20-30 seconds until warm and easily combined. Stir in the vanilla extract and salt.
  3. Pour the peanut butter mixture over the pecans and coconut and stir until well combined.
  4. Line a baking sheet with parchment paper and scoop out spoonfuls of the mixture, forming them into small, bite-sized cookies. Place them on the parchment paper.
  5. Refrigerate the cookies for about 30 minutes, or until they’re firm and set.
  6. Once chilled, enjoy your no-bake pecan coconut praline cookies!

Notes

Cookies store well in an airtight container in the refrigerator for up to a week.

If you prefer, you can swap the pecans for other nuts such as almonds, walnuts, or cashews.

You can substitute peanut butter with almond butter, cashew butter, or sunflower seed butter.

If you don’t have maple syrup, honey or agave syrup can be used as alternatives.

If you want to freeze them, place them in an airtight container or freezer bag, and they’ll last for 2-3 months.
