Description

These No Bake Salted Caramel Cookies are an indulgent, easy-to-make treat with rich caramel flavor, a hint of sea salt, and a satisfying texture from rolled oats. They don’t require any baking, making them perfect for a quick, healthier dessert.


Ingredients

1 cup almond butter (or peanut butter)

1/2 cup maple syrup or honey

1 teaspoon vanilla extract

1 1/2 cups rolled oats

1/4 cup shredded coconut (optional)

1/2 teaspoon sea salt, plus more for sprinkling

1/2 cup dark chocolate chips (optional)


Instructions

  1. In a medium saucepan, combine the almond butter and maple syrup over medium heat, stirring occasionally until smooth and warm.
  2. Remove from heat and stir in the vanilla extract and sea salt.
  3. Add the rolled oats and shredded coconut (if using) to the saucepan and mix until the oats are evenly coated.
  4. Scoop tablespoon-sized portions of the dough, rolling them into balls and placing them on a parchment-lined baking sheet.
  5. Gently flatten each ball with your fingers or the back of a spoon.
  6. Sprinkle a pinch of sea salt on top of each cookie.
  7. If desired, melt the dark chocolate chips and drizzle over the cookies.
  8. Refrigerate for at least 30 minutes to firm up before enjoying.

Notes

Feel free to swap almond butter for peanut butter or any other nut butter.

The shredded coconut is optional, but adds a nice texture if used.

For a vegan version, ensure the chocolate chips are dairy-free and use maple syrup instead of honey.

These cookies can be stored in an airtight container in the refrigerator for up to a week.

For extra flavor, consider adding dried fruit, seeds, or nuts to the mixture.
